After cryomaceration at 5-8°C for 4/6 hours, the must ferments for 15/20 days at 16-18°C. Maturing for 4 months in steel vats.

With its persistence and pronounced mineral edge, our Chardonnay Mandrarossa is notable for its typically Mediterranean hints of prickly pear and orange rind. Laguna Secca takes its name from particular local soils in a terrain, which was once submerged in shallow lagoons, and is now fertile and productive.
